Soft Mango Yogurt Ogura Cake #14

Soft and Light Mango Yogurt Ogura Cake for my collection of Ogura Cakes series................  my no 14 Ogura cakes.

 It tastes heavenly!






  The cake turned out perfect even though I did not over turn the cake after taking out from the oven. 
I did not trimmed the edges of the cake as its quite satisfactory.  Only thing I was wondering what is the course of the wrinkles on top of the cake compare to my previous Ogura Cakes.   Anyone knows??

Spicy Stuffed Hardtail Scad Fish 酿硬尾鱼

Firstly I would like to apology to FB friend Ms Lily  who has been waiting patiently for  this recipe. 

This is the dish mom used to prepare for us.  An appetizing dish that all siblings will crave for more.






Remove the hard skin to serve



Recipe

2 hardtail scad fish - Wash and clean  without  cutting the stomach, slit both sides of fish horizontally.

Ingredients A -  To be pounded

8-10  Dry chillies - cut and seeded soak till soft
2 red chilies 
Chili padi (optional)
some shallots/garlic
1 small pc of turmeric
2 stalk of lemon grass
1 small pc of belancan


1tsp of assam jawa paste
salt n sugar to taste

Method


  1. Heat about some oil in wok.  Saute the pounded ingredients till aromatic.
  2. Add in assam jawa paste, sugar and salt to taste.
  3. Dish out and let it cool for a while
  4. Spoon the  fried chilli paste into the slits and stomach of fish as filling.  
  5. Heat wok with enough oil to fry the fish over medium heat till both sides are cooked.
  6. Squeezed lime juice (I used lemon juice) over the fish and serves.  
Friendly tips


Another way to prepare the stuffed fish is to bake it.  Place stuffed fish on a piece of banana leaf and wrap it up with aluminum foil.  Turn over the foil in between during baking.  Lastly open  the foil to bake  further 10 mins .

Vegetarian Oyster Mushroom in Cereal Crust 香脆麦片鲍鱼菇





This crispy and crunchy vegetarian delights love by all and is a' must try' dish!
An expensive dish if dined in vegetarian restaurant.



Ingredients

250 Oyster mushroom
2 cups cereal

Marinade
Salt
Mushroom seasoning granule


Batter - Mixed till smooth
2 tbsp sweet potato flour (I used rice flour)
5 tbsps plain flour
1 tbsp baking powder
1 tbsp custard powder
8 tbsp water - to adjust
1/2 tsp mushroom essence
1/2 tsp salt
1 tbsp oil
1/2 tsp 5 spice powder
Dash of sesame oil

Method

  1. Blanch mushrooms in boiling water for about 5 minutes. rinse in cold water and squeeze out the moisture. Cut them into halves.
  2. Marinate the mushrooms with the marinade. Set aside.
  3. Dip marinated mushrooms into the batter and coat them in cereal. Deep fry until golden.
  4. Dish out and put on kitchen towel to absorb access oil.
  5. Serve with chilli sauce.

香脆麦片鲍鱼菇


材料

250克 鲍鱼菇
2杯 麦片


腌制料

适量盐
适量蘑菇味调味粒


面糊 - 搅拌均匀和液体状
2汤匙 饭熟粉 (我用粘米粉来取代)

5汤匙 面粉
1汤匙 发酵粉
1汤匙 蛋黄粉
8汤匙 水 (或自己调至适量)

1/2茶匙 蘑菇味调粒
1/2茶匙 盐

1汤匙 食油
1/2茶匙 五香粉
少许麻油


做法

  1. 把鲍鱼菇放入沸水灼五分钟。然后,用开水冲洗。把水份出。将鲍鱼菇分半。
  2. 将腌制料放入鲍鱼菇。 搅拌均匀然后搁置。
  3. 把腌制了得鲍鱼菇粘上面糊和一层麦片。然后放入热油炸成金黄。
  4. 用厨房纸巾吸掉多余油份。
  5. 即可食用。

Soy Milk Prawn Fritters (Susu Soya Cucur Udang)

Here is my 4th post with Soya Milk as one of the ingredients which I am linking to Zoe's Little Thumbs Up event for October month.  My two other posts are Sea Cucumber Fish Maw Bean curd Soup and Bean Curd Cake with Black Sesame .

Soya Milk Prawn Fritter  (cucur udang) a popular snack among Malaysian.  They are many pre-mix  prawn fritter (cucur udang) with different brands are easily obtain off the supermarkets and grocery shops.

Ajinomoto (Malaysia) Berhad had sponsored a Charity Student Development Program  initiated by Fuzi Magic for Orphanage.  The program consist of 3 cooking demonstrations between June to August 2013, it was a great success.  I  am proud to be  one of the volunteer for this  charity program.    Prawns  Fritters ( cucur udang in Bahasa Malaysia) is one of the dish taught.  I would like to take this opportunity to thank Chef Kak  Baiyah of Ajinomoto for the great recipe.

 Don't worry there are still many crispy prawns behind the scence!

Spicy Black Pepper Beancurd 錦綉黑椒豆腐

The original recipe adapted from Famous chef Madam Margaret Cheng, one of the main committee member from the Spastic Center, Petaling Jaya.  The charity organization organized charity cooking demo every last Saturday of each month, with famous chef to committee member to demonstrate  and share their cooking with skills to the public.  Addmission is RM15.00 or more to be donated to the Spastic Center.  

Sharing with you this appealing dish which I had made some amendments.


 Simple ingredients transformed into a premium dish can be served during big occasion, main dish or side dish.  

Ingredients

3-5 pieces savory bean curd (or plain bean curd)  cut into 6
2 cups of oil for deep frying
a little cornflour to sprinkle on bean curd before deep frying
1 tbsp chopped garlic
1 red chilli, seeded and chopped
1 chilli padi chopped ( add more or omit)
1 stalk spring onion chopped

Healthy Beancurd (Tofu) Cake with Black Sesame 芝麻豆腐蛋糕

This beancurd (Tofu) Cake recipe has been left in my folder for quite a while.  It has been weeks of postponing until blogger Zoe's monthly cooking event theme appears. The theme for the month of October 2013 was anything about soya beans.  Befitting the theme, finally I have the chance to try this interesting and healthy recipe cake.  This recipe is sure a hit among the health conscious freak.    

 I am not as pretty as Snow White but I am very very tasty!  ^_^





I am happy that there is no crack on the cake.   Yippie!!

Sea Cucumber Fish Maw Beancurd Soup 海参鱼鳔豆腐羹



Why not we do our bit to save the shark by replacing the shark fin soup to Beancurd soup.  It can be as tastier as shark fin soup and you can add any other ingredients  to give  that extra  oomps to this lovely soup!    So instead of shark fins soup lets go for Beancurd soup, its tastes as goooood!   Its quite tedious task to prepare the soup with cleaning, cutting, soaked, slicing and etc etc.....  But the results is worth it! 

I have prepared this  soup many times and I can't remember why I never blog about it.  The soup is as tasty as shark fin soup only  minus the shark fin and is taste as good.  My soup queen Tammie love it so much.  I called her soup queen as she love to drink soup so much.  When soup is not served during dinner time she will still prepare herself with soup Marmite or canned mushroom soup.   That is my girl, Tammie!


This soup have been prepared many times with few photos  were  posted on my facebook some times ago, and prepared soup again for my son home coming reunion diner.  This time decided to blog about it, credit must give to the event  little thumb ups organized by Zoe.  ^_^

Charity Cooking Demonstration at Children's Spastic Centre, Petaling Jaya, Selangor

My second charity cooking demo was held at Selangor Children's Spastic Association Centre, Petaling Jaya  (my first was at Ti-Ratana petaling Jaya in July 2013).  Confidence has picked up gradually through a few previous live cooking competitions.  I would like to put this in record to invite more people  who are staying around Klang valley to join these charity cooking demo and help to generate funds  for  the less fortunate children. Datin Faridah as head of the Charity organisation will draw up events each month.

Cooking demo is held every last Saturday of each month (unless otherwise stated)  at the Spastic Centre, No. 14 Lorong Utara ‘A’ off Jalan Utara, Petaling Jaya, (Behind Crystal Crown Hotel Petaling Jaya)  
A few famous Malaysian chef who have volunteered to do cooking demo at the centre include Chef Wan, Chef Agnes Chang, Chef Kelvin Chai,  Chef Asrah, Chef Margaret Cheng, Mrs. Yap (Vegetarian Dishes), Chef Kulen,  Chef Ricky Ng and so on......


  A nominal fees of RM15.00 (minimum) is charged as donation to the Spastic Centre, which comes with a lucky draw and light refreshment and taste of demonstrated dished is served after each demo.  Its a noble and meaningful way to volunteer your free Saturday mornings.

 I was invited by Chef Margaret Cheng to do a cooking demo on 28th September 2013

Baked Honey Chicken wings (using my self  made Aromatic Spice Salt)

Moist Steamed Chocolate Cake

Pandan Ogura Cake #13 斑兰相思蛋糕

This is my 3rd posting of Ogura Cake with Pandan flavors.  Again?   Too many Ogura Cake for my blog???    No,  No,  I will  never get enough of Ogura Cake.   In fact I still have some other flavors of Ogura Cake  kept in my folder yet to have the chance to surface! on my blog!   LOL  

I am giving  myself 3 excuses to bake this cake.   Firstly I still have some  left over pandan juice from my Healthy Pandan Steamed Layered Cake , secondly Tammie  and her school mates intend to visit their primary school and wish to bring home baked cake for her teachers.  Last and not least of course I wish to sumbit this post for the Little Thumbs Up event for September month with the theme 'Pandan"   


 

 I have this  thin slice of the cake left for me only, so precious and delicious!  LOL!

Healthy Steamed Pandan Layer Cake

Its take 2Ps  ~ Patient and Passion to make this time consuming cake.  If lazymama can do it, you are definitely no fuss at all in making this healthy and yet delicious cake. It took me 2½ hours to make the cake, but it was worth the effort.    Moreover steaming is always healthier that baking!   Right?  

I am going for Pandan favour for my 1st attempt is simply would like to join the the blog event of   Little Thumbs Up organized by Zoe of Bake for Happy Kids.  Kudos to her for the effort!

The layers were not as perfect as they should be though but I am happy for the taste!  Mamamia!


We love the strong aroma of the pandan, that goes well with a cup of Coffee/Teh!

Malaysia Popular Dish - Nasi Lemak with Sambal Ikan Bilis 班兰参巴椰浆饭

Nasi Lemak is basically a  fragrant rice dish cooked in coconut milk and pandan leaf commonly found in Malaysia, where it is considered the nation dish of Malaysia. 
Nasi lemak is traditionally eaten for breakfast but these days people are ordering it any time of day.
Sinful and bad for the heart but incredibly delicious.. If you eat this once in a while, it should be ok not so bad!



The nasi lemak consists of a hot spicy sauce (sambal), hard boiled egg, cucumber slices, small dried anchovies (ikan bilis) and fried  peanuts at its core and any other side dish you preferred.   Just to name a few  sambal cuttlefish, Ayam masak merah, cockle, stir fried water convolvulus (kangkong),  or beef rendang (beef stewed in coconut milk and spices).

The side dish as follows:


This sambal Ikan Bilis (Anchovies cooked with chilli) is a must to go with nasi lemak.  Look appealing?    I love it!

 These heart shaped eggs are made by my daughter Tammie,  I have failed twice with my 2 attempts.  Too rough or  press to hard I broke the hard boiled eggs.    hehe....    For the making of heart shape hard boiled please refer a video clips  here


Fried Anchovies






I used Basmathi long grain and frangance rice for my nasi lemak.  The rice is so long and the texture is chewy and nice.  



The recipe was adapted from a charity cooking demo initiated by Fugi Magic and sponsored/organized by Ajinomota (Malaysia) Berhad on Living skill Development Programme to benefit  3 orphanage homes.   The cooking was demonstration by the chef from ajinomoto, after her demonstration, 6 groups will prepared  the dished taught at  cooking station at the venue.       A Big  Thank you to Ajinomotoa!!!

Recipe

For the Nasi Lemak

3 cups of rice  - washed and drained ( I used Basmathi long grain fragrance rice)
150 ml santan (coconut milk)
3 cups of water
1 tsp salt or to taste
4 pices of pandan leaves knotted. (I used  3 tbsp of pure pandan juice ( blend about 10 pandan leave with some water to extract/sieve the juice) 
3 slices ginger

Put all the above together in the electric rice cooker, stir it and cook the rice as usual.


Ingredients  for Sambal Ikan Bilis - all blend together with some water

1 big onion- chopped  (or 5-6  shallots)
50 gm of dried chillies (seeded and soaked)
10 gm belacan (shrimp paste) -  toasted

Other ingredients 

150 ml cooking oil
2 tbsp sugar or to taste
50 grms of Ikan bilies (fry briefly)
1 tabsp of Asam jawa without  seed mixed with 100 ml of water 
1 big onion (sliced) 
1 tbsp Tumix Pati Ikan Bilis  

Method  

Heat oil in a wok saute the blended ingredients using medium fire till oil seep out.  This will take at least 20 minutes.  
Add in the asam java juice, Tumix Pati Ikan bilis, big onion and sugar to taste.
Add in the fried ikan bilis and mix well dish out to service with hot nasi lemak.

Other condiments

3 hard boiled egg (cut into halved  or quartered) - For the heart shape egg, pse refer the above video
1 cucumber -  sliced
100grms groundnuts  - fried
50 gm Ikan  bilis (deep fried till crispy) 
Fried luncheon meat (Optional)

Arrange the Nasi Lemak, sambal Ikan bilis and other condiments and have hearty Malaysian meal.   



On the day of the above charity cooking demo, the group with 3 children lead by me are the winner of the best Nasi Lemak prepared among 6 groups that taking part in the hands-on live cooking.  Each of us received a thermos for our joint effort!    The judging  is base on the presentation  of food including the cooking of fried ikan billis, groundnuts, hard boiled eggs and cucumber cutting.
